Maple-Cinnamon Apple Crispbreads With Oat-Pecan Crumble

Ingredients:
4 tablespoons 4 tablespoons 1 cup ½ cup ¾ teaspoon ¼ teaspoon 2 8 1 cup |
butter, divided maple syrup, divided old-fashioned rolled oats pecan halves, coarsely chopped ground cinnamon, divided fine sea salt large apples, such as Golden Delicious, Honeycrisp, or Fuji Wasa Sourdough Crispbreads vanilla Greek yogurt |
Directions:
1. In a large nonstick skillet heat 2 tablespoons butter and 2 tablespoons maple syrup over medium heat.
2. Once butter and maple syrup are bubbly, add oats, pecans, ¼ teaspoon cinnamon, and salt.
3. Cook, stirring frequently, until the oats and nuts are browned and fragrant, about 5 minutes. Transfer to a plate to cool. Wipe out skillet.
4. Core apples and cut into 1” chunks.
5. Place skillet back over medium heat and add remaining 2 tablespoons butter.
6. Once butter is melted, add apples. Cook, stirring occasionally, until the apples start to brown and soften, about 5 minutes.
7. Add remaining 2 tablespoons maple syrup and remaining ½ teaspoon cinnamon and cook, stirring, until apples are coated in the syrup and are slightly caramelized, about 3 minutes more. Let apples cool slightly before serving.
8. To assemble, spread each crispbread with 2 tablespoons yogurt. Top generously with apples, then sprinkle with oat crumble.
