Wasa Sourdough Crispbread
Sweet Potato mashed
Green Onion, sliced thin
Salt Flakes
Cracked Black Pepper


PREHEAT oven to 375° F.
BAKE 1 sweet potato for 35 - 40 minutes or until soft.
SLICE open with knife and spoon out potato from the skin into a bowl.
SMASH sweet potato with a spoon until mashed.
HEAT butter over medium heat in a small nonstick skillet; add egg and fry until edges are crispy and yolk is still running.
SPREAD sweet potato on Wasa Sourdough Crispbread, top with fried egg and garnish with sliced green onion, salt and pepper.
