Thin Rye with Sweet Potato, Egg, Bacon, & Green Onion

Ingredients:
1 slice | Wasa Thin Rye sprinkled with blue poppy seeds & sea salt |
1 tablespoon | Sweet Potato mashed |
1 small | Egg |
1/2 strip | Bacon, sliced |
1 teaspoon | Butter |
teaspoon | Green Onion, sliced thin |
Directions:
PREHEAT oven to 375° F.
BAKE 1 sweet potato for 35 - 40 minutes or until soft.
SCOOP sweet potato out from skin and place into bowl.
SMASH sweet potato with fork until mashed.
COOK bacon in a nonstick skillet 1-2 minutes on each side; remove and slice.
HEAT butter over medium heat in a small nonstick skillet; add egg and fry until edges are crispy and yolk is still running.
SPREAD sweet potato on Wasa Thin Rye, top with fried egg and bacon. Garnish with sliced green onion.
