Tomato Soup with Whole Grain

Wasa Whole Grain
olive oil
garlic, minced
large yellow onion, sliced
San Marzano peeled tomatoes
chicken stock
heavy cream
fresh basil, roughly chopped
dried oregano
salt and pepper
cheddar cheese


HEAT olive oil over medium heat in heavy bottomed pot, add garlic and cook over low heat 1-2 minutes
ADD onion and cook until translucent, about 5 minutes
STIR in the San Marzano peeled tomatoes, chicken stock, and sugar
SIMMER and cook uncovered for approximately 20 minutes, or until it has thickened
ADD heavy cream, basil, oregano, then season to taste with salt and pepper
PUREE the soup until it is smooth, transfer back to pot and set aside
PREHEAT a toaster oven to 375° and place 8 WASA on a parchment lined cookie sheet, top with cheddar cheese slices
BAKE until melted through
SERVE soup in bowl garnished with fresh basil and a slice of WASA with melted cheddar
