Sweet Pea Spread with Feta & Tomato

Ingredients:
8 slices | Wasa Gluten Free Sesame & Sea Salt |
¼ cup | chopped yellow onion |
2 TBSP | extra virgin olive oil |
2 cups | green peas |
1 cup | vegetable broth |
To Taste | salt and pepper |
1-2 | mint leaves |
1 cup | cherry tomatoes |
1 cup | feta |
Directions:
SWEAT ¼ cup chopped yellow onion with 2 TBSP extra virgin olive oil gently over medium heat for 4 minutes.
ADD 2 cups peas and 1 cup vegetable broth, season with salt and pepper and bring to boil, cook 2 minutes.
SEPARATE liquid from peas and cool down as quick as possible – set liquid aside in case needed for below step.
PROCESS peas in blender with mint leaves until smooth - adjusting density with the right amount of liquid.
SPREAD pea mixture on cracker.
SLICE cherry tomatoes in half and place on top of pea mixture.
SPRINKLE feta on top of tomatoes.
ADD 2 cups peas and 1 cup vegetable broth, season with salt and pepper and bring to boil, cook 2 minutes.
SEPARATE liquid from peas and cool down as quick as possible – set liquid aside in case needed for below step.
PROCESS peas in blender with mint leaves until smooth - adjusting density with the right amount of liquid.
SPREAD pea mixture on cracker.
SLICE cherry tomatoes in half and place on top of pea mixture.
SPRINKLE feta on top of tomatoes.
